Our Tequilas

Tequila El Mexicano is a tribute to traditional tequila production with an exceptional attention to detail.  Custom-made pot stills designed by our father, music in the fermentation room, traditional “low and slow” cooking process and open-air fermentation are all ways we honor the knowledge and passion of our elders.  The result?  Pure, authentic, tequila, where the only thing added is 3 generations of expertise.

The Process

Mature blue agave selected for El Mexicano Tequila

To obtain desired quality, we only select fully-matured agaves (6+ years old).

Slow cooked agave in stainless-steel

Our agave is slow cooked in stainless-steel, low-pressure autoclaves for 18-24 hours.

El Mexicano five-step roller milling process

We utilize a precise five-step roller milling process. Our fermentation room is harmonized with classical music to achieve uniformity and create the most harmonious environment for the yeast. Our 7+ day fermentation is one of the longest in the industry.

Distillation in custom stainless steel pot stills

We distill our tequila in small batches in custom stainless steel pot stills. The stills were designed by our master tequila maker and meant to enhance the range of flavors & aromas.

Aging in new American and French oak barrels
Aging

Through careful aging in new American and French oak barrels, our Reposado and Añejo preserve their agave-forward character while unfolding notes of vanilla and orange marmalade.
